Blogtember 23: A family recipe

This is one of my favorite family recipes ever! It is a sour cream apple cake and it is the best! I remember making this with my grandma growing up! I have brought this cake to parties and have made it for friends birthdays. I have always heard positive things from others about this treat!  So I couldn’t find the exact recipe she used but this one should be close enough.

Sour Cream Apple Walnut Bundt Cake


For the Crumble Topping:
1 c. All-Purpose Flour
½ c. Brown Sugar
1 tsp. Cinnamon
¼ tsp. Kosher Salt
1 stick Unsalted Butter, melted

For the Cake:
2 c. All-Purpose Flour
1 ½ tsp. Baking Powder
¼ tsp. Salt
2 tsp. Cinnamon
½ tsp. Nutmeg
3 Eggs
1 c. Sugar
1 tsp. Vanilla Extract
1 8 oz. container (1 scant c.) Sour Cream
½ c. (1 stick) Unsalted Butter, melted and cooled
6 large Apples (I used 2 Golden Delicious, 4 Braeburn), peeled and thinly sliced
additional butter and flour for preparing the pan


1. Preheat oven to 350°. Butter and flour a tube pan.
2. Make the crumb topping. Whisk together flour, brown sugar, cinnamon, and salt in a small bowl. Pour in the melted butter and stir with a fork until large clumps form. Set aside.
3.In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

4. In a medium bowl, whisk together the eggs, sugar, vanilla, sour cream, and butter. Pour the wet ingredients into the flour mixture and stir until just combined. Fold in the apple slices.
5. Dollop the cake batter into the prepared pan. Spread with a spatula to evenly distribute the apples and create a fairly level top. Sprinkle clumps of the crumb topping evenly over the top of the cake.
6.Bake until a tester inserted in the center of the ring glides through the apples and comes out free of cake batter, about 1 hour, 5-10 minutes. I would start checking at 50 or 55 minutes as apple cake baking times tend to vary based on size/variety of apples used.
7.Cool the cake for 10-15 minutes in the full pan, then remove the outer portion and allow to cool at least another 15 before you attempt to pull it off the pan completely. Serve the cake warm.


Apples all Around

Apple Walnut Sour Cream Coffee Cake



1 cup chopped walnuts

1 cup of sugar

1 cup of butter

1/2 cup of sugar

1 tsp. of vanilla

2 eggs

2 cups of flour

 1 tsp. baking soda

1 tsp. baking powder

1 cup of sour cream

1tsp. salt

1 cup of sliced apples


Preheat oven to 375

In a small bow mix 1 tsp. of cinnamon, 1 cup of chopped walnuts, and 1/2 cup of sugar.  Set aside.

Meanwhile, grease a 9 ” tube pan with removable bottom or any pan of your choice.

In a large bowl, with an electric mixer at high speed, mix 1/2 cup of sugar still light and fluffy, add 2 eggs, one by one and then 1 tsp. of vanilla.

Next sift 2 cups of flour with 1 tsp. baking powder, 1/2 tsp. salt, 1 tsp. baking soda and beat at low speed, alternating with 1 cup of sour cream.

Spread half the batter into the pan and top it with apple slices (cut thin) then top with half of the walnut mixture.  Pour the rest of the batter on top and finish off with the rest of the walnut mixture.

Bake for approximately 40 min in the preheated oven.

Remove cake and let cool on wire rack for about 30 minutes.


When Life Gives You Lemons …

Make lemon bars!  Baking has become one of my favorite things to do and it helps relieve stress.  Recently I was in the mood to try a new recipe and it turned out great!  I baked lemon bars which are actually pretty simple to make and they tasted delicious!  I typed the recipe below and included pictures of the cookbook for reference.

Recipe: The All New All Purpose New Joy of Cooking


Lemon Curd Bars Cockaigne


The crust

1 1/2 cups of all purpose flour

1/4 cup powdered sugar

12 tablespoons (1 1/2 sticks) unslated butter, cut into small pieces

Lemon Filling

6 Eggs

3 cups of  sugar

2 grated zest of lemon

1 cup plus 2 tablespoons lemon juice ( you can adjust this to taste)

1/2 cup of all purpose flour

Crust recipe

Preheat the oven to 325 F

Have a 13 X 9 inch baking pan

 Sift the 1 1/2 cup  of all purpose flour and 1/4 cup of powdered sugar in a large bowl.

Add in the small pieces of butter to the mixture

Using your fingers, press the mixture into the bottom of the pan and 3/4 inch up the sides to avoid leaking during baking.

Bake until golden brown, 20 to 30 min., Set aside to cool slightly.  Reduce the oven temperature to 300

Lemon Filling Directions

Whisk the 6 eggs and 3 cups of sugar until well combined

Then stir in the grated zest of lemon and lemon juice

Sift  1/2 cup all purpose flour over the top and stir in until well blended and smooth.

Pour the batter over the baked crust. Bake until set, about 35 min.



My Delicious Crisp…

Was in the mood for something sweet the other night so I decided to bake an apple and pear crisp.  This is a scrumptious recipe and perfect for the fall and winter time.

Apple and Pear Crisp



Pan/baking dish of your choice

2 apples peeled and cubed

2 pears peeled and cubed

1 tablespoon all purpose flour

2 table spoons honey

1-1/2 tablespoons lemon juice

1/2 cup of all purpose flour

1/2 cup of packed brown sugar

1/2 cup of quick cooking oats

1/4 cup of ground walnuts

1/2 cup butter


1.Preheat oven to 375 degrees

2.Grease baking dish

3.In a bowl mix the apples, pears, 1 tablespoon of flour, honey, and lemon juice

4. Place fruit mixture in the baking dish you chose

5.In a separate bowl min the 1/2 cup flour, brown sugar, oats, walnuts, and butter to the consistency of coarse crumbles

6.Sprinkle over fruit mixture

7.Bake 45 minutes in the oven until brown and crisp on top

8. Enjoy!


Banana Bread Baking

Holiday time is when I bake the most during the year.  My sister, father, and I baked banana bread and it came out delicious.  Here is the recipe we used.



Graesed pan of your choosing

1-1/3 cups all purpose flour

3/4 teaspoon slat

1/2 teaspoon baking soda

1/4 teaspoon baking powder

2/3 cup  brown sugar

4 1/3 butter unsalted

2 large eggs lightly beaten

1 cup mashes bananas

1/2 cup chopped walnuts or pecans


1. Preheat oven to 350 degrees

2.In a large bowl combine the flour, salt, baking soda, and baking powder

3.Place the butter and sugar into the flour mixture

4.Mix on high speed until lightened in color and texture

5.Add the eggs into the mixture  and beat until combined

6.  Add the bananas and pecans until combined

7. Scrape the batter into the pan and spread evenly.

8.Bake  for 50- 60 minutes until a toothpick inserted in the center comes out clean

9. Enjoy!


The best cookie around… Oatmeal Chocolate Chip

Since I am in a baking mood lately I figured I’ll introduce you all to my favorite cookie: oatmeal chocolate chip cookies.  I absolutely love baking these scrumptious treats for friends, family, and co-workers especially around the holidays.  Below is the recipe I use when baking the cookies and it makes about three dozen cookies. Enjoy!

Oatmeal Chocolate Chip Cookies


8 oz. (2 sticks) butter, softened

1 cup of packed brown sugar

3/4 sugar

2 tsp. vanilla

1 tsp. cinnamon

2 eggs

1-1/2 cup of all purpose flour

1/2 tsp. baking powder

1/2 tsp. salt

3 cups Quick oats

2 cups of chocolate chips


1.Heat oven to 350 degrees

2.Beat butter, sugar, and vanilla on medium speed with an electric mixer until creamy.

3.Beat in eggs until light and fluffy

4.Mix in flour, baking powder, cinnamon, and salt on low until blended.

5.Stir in oats and chocolate chips

6.Form dough into balls and place two inches apart on cookie sheet

*To help the cookies maintain a round shape use a teaspoon (the circular one used for measuring) to scoop out the cookie dough.
